Banana and Protein Bites (Vegan and Gluten Free)

Who doesn't like a sweet treat? And the addition of protein in these bites, means they help to keep you full too and make a great post workout treat. Winner winner, chicken dinner 

INGREDIENTS:
(serves about 16... or 4 MASSIVE ones 🤣)
    • 1 cup mashed ripe banana about 3 medium bananas
    • 1/3 cup coconut sugar
    • 3 tablespoons coconut oil melted, cooled to room temperature
    • 2 tablespoons milk of choice (I used vanilla oat)
    • Egg replacement powder equivalent to 1 large egg
    • 1 teaspoon pure vanilla extract
    • 3/4 cup gluten free plain flour 
    • 1/4-1/2 cup of vanilla vegan protein powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 1/4 teaspoon salt
 
⏲METHOD
This recipe is basically like a standard muffin batter. Combine the dry ingredients. Combine the wet ingredients. Tip dry in to wet and mix.
 
Preheat oven to about 180c
 
Mash up the banana's and add coconut sugar, coconut oil, milk, egg (replacement), and vanilla until well mixed
 
 In another bowl, combine the flour, protein powder, baking soda, cinnamon, nutmeg, and salt.
 
Add the dry ingredients to the wet ingredients and With a wooden spoon or spatula, stir to combine, stopping as soon as the flour disappears. 
 
At this point, if you wish you can add chocolate chips or some chopped nuts.
 
Pour the batter in to a 8x8 baking tray, lined with baking paper. Give it a wee bang on the side to make sure it's all settled. Sprinkle some choc chips on the top if you like. Now bake for 16 to 20 minutes, or until you prod it with a skewer and it comes out clean. Try a couple of places, because if like me your oven has seen better days, it might not have cooked evenly all the way through. Let the pan cool on a wire rack and then lift out, in the paper, and put on to a chopping board and cut to please your desires 🤣
 
IMPORTANT NOTE
 
This yummy recipe originated from WellPlated.com and I wanted to amend it so I could make some for my dad so it had to be gluten free. As I try to limit my dairy I thought why not add coconut oil and egg replacement too and see what happens!!
 
It took slightly longer for mine to cook (may have been a little generous with the banana and my oven really has seen better days!!). The GF flour also adjusted the texture slightly BUT... I've had the thumbs up from my 4 guinea pigs (and that includes my husband who doesn't like banana lol). The vanilla protein powder does make it particularly sweet but I wanted something that would make it a little more filling and it's worked beautifully.
