Mixed Bean Shizzle

Improving your health doesn't have to be hard.  It's simply about LOOKING for ways to keep it simple.

One way to do that is to cook ONE thing that you can use in multiple ways (as well as freeze for use later on).

Today I'd like to share my "Mixed Bean Shizzle" which ticks all those boxes. It's all about keeping things SIMPLE. And what better way than to cook one thing that can be used in multiple ways?

INGREDIENTS:
(this will do at least 4 main servings)
 
2 cans beans (any beans will do. I like black beans, haricot beans, mixed beans. 
1 cup dried mung beans (washed.. these are optional but a great crunch and oodles of good stuff)
2 cans chopped tomatoes 
2 tbsp tomato puree 
1 large onion, chopped 
2/3  garlic cloves, finely chopped
1-2 dspn smoked paprika, ground coriander, ground cumin
Chilli flakes/power... add this for you own taste, or not.
Fresh coriander and lime juice to taste, if you like

Chuck it all in your crockpot and put it on stew or....
Sweat down the garlic and onion with a little bit of oil/fry light..add all the other ingredients and simmer for about 30 minutes. Add salt to taste.
Play around with the flavours. I love deep flavours so I always add maximum coriander, cumin and paprika.
 
DIFFERENT WAYS TO SERVE THIS
 
1. I love this as part of a break-fast bowl... along with boiled egg, avocado, chopped tomato and some fresh sprouts (I've used radish ones in this pic)
Have this with baked potato or wedges & salad for dinner, and then wrapped up in a burrito with avocado for post workout the following day! 
 
2. Wrap It Up - this is another break-fast favourite, but I'll have this if I've done a workout. My entire family love this so it's a healthy and easy tea time offering. 
 
I load up a tortilla wrap with the shizzle, sprinkle with some salsa and cheese, wrap up and fill up an oven proof dish. Spring a little more cheese and bung in the oven (around 180c) for 5-20 minutes - this will depend if it's just the cheese that needs melting or if you need to heat the mix through as well. 
 
 
3. Sweet Potato Shizzle - you could like the sweet potatoes and roast; bake the sweet potato and top with the shizzle or make sweet potato chips/wedges and top them with the shizzle and cheese. YUM!!
 
4. With rice - does what it says on the tin. Make it bit more of an occasion with some tasty guacamole and sour cream.
