Found this great recipe of BBC Good Food and decided to give it a go this evening. It didn't disappoint.
I realised I hadn't ordered courgettes in my online shop (although I did receive grapes that I didn't order!) but I didn't miss them.
The other thing I'd suggest is either get a REALLY big frying pan ( I couldn't get all the kale in mine) or consider wilting down the kale in a separate pan and then transfer once the volume has reduced.
I have to confess, the recipe says serves 4 but I probably ate half.. as a main course and I have given the remainder to my sister for her lunch tomorrow!
