"Diet" Pizza, That Tastes Good? Yes It Does Exist

Who doesn't LOVE pizza (if you don't, I'm afraid we can't be friends ).

So what if you are on a fat loss plan, can you still eat pizza? YES

OK, so what about if you want to be gluten free and vegan, can you eat pizza? YES

I don't know about you, but the shop bought GF, Vegan pizzas are not only hard to come by, but not awful nice. I had a great experience at Pizza Express (although they were a tad tight on the "cheese").

What's the answer Louise - I want pizza

The simple answer is create your own. I took a recipe from my Joe Wicks #90dayveggieplan and gave it a gluten free and vegan makeover that I'm going to share with you right now!! 

Ingredients 

35g+ (see notes) gluten free self raising flour

35g gram flour (chickpea flour)

65g of non dairy yoghurt - I used KoKo 

1/4 tsp baking powder

Pinch salt (I added a few sneaky chilli flakes too)

1 dsp tomato puree

45g vegan cheese (your choice - I used the grated mozzarella type)

Toppings of your choice - I used antipasti...

How Can You Direct Your Thoughts For More Success?

Last week I started the Series on "Mind Mastery" by talking about clarity. (If you didn't read it, get it here). 

So now you have a whole new meaning around Clarity and I hope that it's given you breathing space and that you've been able to make a decision on how you can simply choose to win each day, knowing that it's ALL creating the bigger picture.

I think it's fair to say that most people have very little awareness or control of their thoughts. Just like a pinball machine, it's a series of random conversations in their heads, each one bouncing off and activating the next, leading to 95% of the SAME thoughts every day and over 80% of those negative. I think this is one of those facts that scare me the most. The same internal conversation every single day and biased toward negative. It's no wonder the world is in the state it's in - it's a direct reflection of mass consciousness. Sorry, I digress.

Mindset Mastery Map - Where Will It Take You

I was controlled by my mind from a very early age. By the time I was 11 or 12 I was aware that I didn't fit it. Soon that judgement became that I was too ugly and fat to fit in. 

Over the years, that talk penetrated every area of my life and little did I know, that the reality that I found myself living, was created from that negativity. After suffering with over 5 years of severe post natal depression, I noticed an immediate shift when I had the courage to leave my relationship and choose to be a single mother to my two daughters. 

For the first time in what felt like an eternity, I could breathe. I remember touching my face as I smiled because, this time, I felt the smile in my body. It wasn't a mask. My circumstances were far from great but the fact that I'd made a choice that served by sanity was like being lifted high on top of a wave, where I could see new choices. New beginnings. And hope. I saw and felt hope.

Tuscan Kale and Bean Stew

This is a really simple recipe and one that I've adapted ever so slightly from Joe Wickes' 90 Day Veggie Plan that I'm currently on (and loving it).

Soups are great for so many reasons. They tend to be quick to knock up (especially if you have an Instapot), helps toward your 5 a day and they are really filling so great if you are on a health plan. 

Ingredient (serves 2)

2 tsp vegan butter

2 carrot (pref organic) washed and finally chopped

2 stick celery - as above

2 cloves garlic - crushed or finely sliced

2 tsp (or to taste) of finely chopped fresh rosemary. You can substitute dried if you like.. start with 1 tsp and add depending on your taste 

1 good tsp of turmeric 

4 tsp tomato puree

1 or 2 vegetable stock pot (depending on your taste)

600ml boiling water

1 can tinned beans (I like haricot or butter bean)

Couple handfuls of kale or cabbage (pick out those big chunky stalks!)

Salt and pepper to taste

60g vegan feta cubed
